The basic steps to create an Order are as follows:

1. Navigate to Calendar > Available.
2. Find the date for slaughter.
3. Click on the Species.
4. Select a Producer.
5. Select # of animals.
6. Save  the Order.

You can also schedule an Animal from the Dashboard with these steps:

1. Navigate > Dashboard
2. Click "Schedule an Animal"  under the "To Do" area.
3. Select a Species from the dropdown.
4. Adjust the Month of needed using the right arrow
5. Click the icon on the day you want to Kill
6. Follow steps  4, 5 and 6 above
